Arianna's Scallops (kammuslinger)
Ingredients:
scallops
butter
extra virgin olive oil
parsley
garlic
pepper
half a lemon juice
half a glass white dry wine
salt
Method:
Chop the parsley together with a clove of garlic.
Melt the butter in a pan (about 30 gr) and add 5 or 6 spoons of extra virgin olive oil.
Add in the pan the chopped parsley + garlic and let it cook slowly for a couple of minutes, and mix it once in a while. After 2 min add the scallops + pepper and let them cook for about 5 min. Then take them out of the pan and put them on a plate.
Add half a lemon juice to the half glass of dry white wine, and then add it to the sauce in the pan. Let it cook for 3 or 4 min.
After that put the scallops back in the pan and let them cook for 4 or 5 min more, adding some salt.
